Students learn basic culinary techniques and create meals without relying on a recipe. This two-week, hands-on experience is for a student who is not familiar with a commercial kitchen and has minimal experience preparing and cooking dishes. This program is modeled after a program offered at the Culinary Institute of the Carolinas to train line cooks to prepare scratch made meals at Greenville County's Food and Nutrition Services.

Notes:

Cost includes all supplies and uniform for the class. Students must supply black oil and water resistant slip-proof shoes. No visible jewelry worn in kitchens. What to expect Learn basic cooking principles, including but not limited to the following: Orientation is required prior to the class start and will include a pretest to review current knowledge. 8-Day program, Tuesday - Friday the first week due to the holiday, and Monday - Thursday week 2. Class is 5 hours in the kitchen per day 2 hours per day in the classroom learning life skills and ServSafe Food Handler Sanitation Week 1 Tuesday Knife skills, equipment identification, identification and understanding of herbs and spices, developing a flavor profile Wednesday A variety of basics sauces and stocks Thursday Soups and vegetable cookery, experiments with vegetable pigments Friday Potatoes, grains and pasta Week 2 Monday Salads, dressings and emulsifications Tuesday Dry heat cooking methods: sauté, deep fry, pan fry, roast, and grill Wednesday Moist heat cooking methods: braising, stewing, boiling, steaming, hot and cold smoking Thursday Post-test and demonstration to verify acquired knowledge and skills
